Crunchy Broccoli Slaw

Cut brocolli stems into long thin strips with a fine julienne peeler. The sweet and crunchy stems are perfect in a fresh-tasting slaw with carrots, scallions and salty sunflower seeds.
In a food processor, process the mayonnaise, vinegar, oil and ginger until smooth.

Apricot Salad
Ingredients:

1 large box (6 oz) Apricot Jello
1/2 cup Sugar
1 can Crushed pineapple
1 cup Diced celery
1 cup Chopped pecans
1 cup Cool whip
1 cup Ice water
8 oz pkg Cream cheese

Procedures:

Bring pineapple and sugar to a boil.

Add ice water, nuts and celery.
Set in refrigerator until it starts to chill.
Remove and fold in the cool whip.

Artichoke Salad

Artichoke Salad
Ingredients:

14 oz can Drained & chopped artichoke (not marinated)

2 tbsp Mayonnaise
1 tbsp Ketchup
2 Celery Heart stalksĀ 1/2-inch [1 cm] pieces
1 oz Almonds slivered
1 tbsp Olive Oil
1 tsp Fresh parsley chopped
Salt & Pepper to taste

Procedures:

Combine all ingredients.
chill for at least 1/2 hour.
Serve on leaves of lettuce.
